I created this quesadilla last night by changing around a plain old zucchini quesadilla recipe that I’ve used before. I think the addition of shrimp, and the few other additions, make it the best quesadilla I’ve ever made. I called them Thai-style because of the addition of basil, combined with cilantro. Reminds me of Thai food. And don’t skip the rice-wine vinegar or you’ll be sorry. Yum.

Ever since M was around 3 years old, he has been a very picky eater. Funny thing is, before that point, I used to brag about how many foods he would eat with relish. Starting with avocado, M would plow through servings of broccoli, kale, and spinach with the kind of energy most kids only direct towards cake icing. So J helps feed the cats their dry food, with M nicely supervising. However, she seemed to have reserved a small handful herself and was found 2 minutes later sitting on the couch and munching.

We joined a CSA at a local farm recently and have been enjoying our super-fresh, peak of season produce. CSA stands for Community Supported Agriculture. It’s basically a subscription to produce – just like paying a subscription fee and getting a magazine every month, we paid a subscription fee and get fresh produce every week for 6 months.
